Easy Baked Mexican Bean Dip Recipe

You know that moment when you're heading to a party and realize you need to bring something, but you don't have three hours to spend in the kitchen? This baked Mexican bean dip is your answer. It's the kind of recipe that looks like you tried way harder than you actually did β€” creamy, cheesy, genuinely delicious, and ready in under 30 minutes.

The best part? You can make it ahead. Assemble it in the morning, cover it, and bake it right before you leave. Or make it at someone else's house and use their oven. It's that flexible.

Why This Bean Dip Works

There's something about the combination of refried beans, cream cheese, and sour cream that just works. The beans give it substance and that authentic flavor. The cream cheese and sour cream make it impossibly creamy. The salsa adds brightness and a little kick. And the homemade taco seasoning? That's the secret ingredient that makes people ask for the recipe.

Store-bought seasoning packets work fine, but mixing your own takes two minutes and tastes noticeably better. Plus, you control the heat level β€” add more cayenne if you like it spicy, or leave it out entirely if you're serving a crowd with varying spice tolerances.

Ingredients You Need

  • 1 can refried beans (14–16 oz)
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup salsa, drained slightly if very watery
  • 1Β½ cups shredded cheddar cheese, divided

Homemade Taco Seasoning

  • 1 tsp chili powder
  • 1 tsp ground cumin
  • Β½ tsp smoked paprika
  • Β½ tsp garlic powder
  • Β½ tsp onion powder
  • Β½ tsp dried oregano
  • Β½ tsp salt
  • ΒΌ tsp black pepper
  • Pinch of cayenne pepper (optional)

Everything here is a pantry staple. If you don't have smoked paprika, regular paprika works. If you don't have one of the spices, skip it β€” the dip will still be good. The main thing is the combination of cumin and chili powder, which gives it that taco flavor everyone expects.

How to Make It

  1. Heat your oven to 375Β°F and lightly grease an 8x8-inch baking dish or small casserole.
  2. Mix the base. In a bowl, combine the softened cream cheese, sour cream, refried beans, salsa, and all of your taco seasoning. Stir until everything is well combined and smooth. This is where the magic starts happening.
  3. Add the cheese. Stir in 1 cup of the shredded cheddar.
  4. Transfer to the baking dish and spread it in an even layer. Top with the remaining Β½ cup of cheese.
  5. Bake for 20–25 minutes until it's hot around the edges and the cheese is melted and bubbly.
  6. Let it rest for 5 minutes before serving. This helps it set slightly so it's easier to scoop.

Serving and Toppings

Serve this with tortilla chips and watch it disappear. The recipe as written is genuinely delicious, but if you want to get fancy, add any of these on top after it comes out of the oven:

  • Chopped green onion
  • Pickled jalapeΓ±os
  • Fresh cilantro
  • A dollop of sour cream or Mexican crema

None of these are necessary β€” the dip is perfect on its own β€” but they're nice if you have them on hand.

Make-Ahead Tips

You can assemble this dip the night before and keep it covered in the fridge. Add about 5 minutes to the baking time if you're baking it straight from the cold. You can also freeze it unbaked for up to a month β€” just add 10 minutes to the baking time.

If you're bringing it somewhere, bake it at home, let it cool slightly, and transfer it to a small slow cooker or insulated container to keep it warm during transport. It stays creamy and appetizing for hours.
